The second episode of Geek Eats arrives today! For this episode, the fandom focus is The Legend of Sleepy Hollow. Specifically, it is the Disney version of the story that can be found on Disney+ under The Adventures of Ichabod and Mr. Toad. Once again, Mr. Daps and Sarah both created food that was inspired by the fandom. For each episode of this podcast about food and fandom, recipes are either created or reviewed. For this episode, recipes are being created. Sarah created a deviled egg recipe, which can be found at GeekEats.net, and Mr. Daps came up with a stuffed pumpkin recipe.
The Fiery Jack-O’-Lantern is a fun play on a stuffed baked pumpkin. In this case, the pumpkin was carved first to look like the one that the Headless Horseman chases Ichabod with. Inside the pumpkin was ground turkey, spinach, corn, and mushrooms. These all seemed fitting for an autumnal dish. There are also some fiery spices thrown in to represent the flames coming out of the Headless Horseman’s Jack-O’-Lantern. Finally, at the very end, some mozzarella cheese was melted on top. Check out the recipe below, give it a try, and then share how it turned out for you and any tips you learned along the way!
The second episode of Geek Eats can be found at GeekEats.net. DC Sarah’s recipe that she created for this episode can also be found there, along with other recipes created for this podcast.

Fiery Jack-O-Lantern
Ingredients
Method
- Preheat oven to 400 degrees.
- Cut pumpkins in half and clean out the insides. (Carve pumpkins if you’d like)
- Place pumpkins (without their lids) on an oiled pan and bake at 400 degrees for about 35 minutes, or until soft.
- Brown Ground Turkey with salt and pepper in a pan on the stove on medium.
- When browned, add onions, garlic, and mushrooms, then cook until soft.
- Add Chicken Broth and Wild Rice.
- Bring to a boil and then let simmer until wild rice is soft (time depends on rice) and most of the Chicken Broth has been absorbed.
- Add corn and spinach and mix.
- Stir occasionally while spinach wilts.
- Once the pumpkins and filling are completed fill each with the filling while the pumpkins are still on the pan.
- Put shredded mozzarella cheese on top of the filling on the inside of the top of the pumpkin.
- Return to oven until the cheese is melted/browned.
- Serve and enjoy!
