Fiery Jack-O-Lantern

A stuffed baked pumpkin recipe inspired by The Legend of Sleepy Hollow.
Servings: 2 people
Course: Main Course
Cuisine: American

Ingredients

  • 2 Sugar Pie Pumpkins
  • 1 lb Ground Turkey
  • 1 10 oz package Sliced Baby Bella Mushrooms
  • 2 cloves Garlic
  • 1 medium Yellow Onion chopped
  • 1 cup Wild Rice
  • 1 quart chicken stock or other stock/water if preferred
  • 1 15 oz can corn
  • 1 6 oz bag baby spinach
  • 4 oz Shredded Mozzarella Cheese approximately
  • 1 tsp Salt or to taste
  • 2 tsp Pepper or to taste
  • 2 tsp Paprika
  • 1 tsp Cayenne Pepper or to taste
  • 1 tsp Red Pepper Flakes or to taste

Method

For Pumpkin
  1. Preheat oven to 400 degrees.
  2. Cut pumpkins in half and clean out the insides. (Carve pumpkins if you'd like)
  3. Place pumpkins (without their lids) on an oiled pan and bake at 400 degrees for about 35 minutes, or until soft.
For Filling
  1. Brown Ground Turkey with salt and pepper in a pan on the stove on medium.
  2. When browned, add onions, garlic, and mushrooms, then cook until soft.
  3. Add Chicken Broth and Wild Rice.
  4. Bring to a boil and then let simmer until wild rice is soft (time depends on rice) and most of the Chicken Broth has been absorbed.
  5. Add corn and spinach and mix.
  6. Stir occasionally while spinach wilts.
For Stuffed Pumpkin
  1. Once the pumpkins and filling are completed fill each with the filling while the pumpkins are still on the pan.
  2. Put shredded mozzarella cheese on top of the filling on the inside of the top of the pumpkin.
  3. Return to oven until the cheese is melted/browned.
  4. Serve and enjoy!

Notes

Note: there will most likely be leftover filling for this recipe. You can use this in future stuffed pumpkins, stuffed squash, or even on baked potatoes.
