The first episode of Geek Eats, a new podcast from Daps Magic, debuts today. For this new podcast, Mr. Daps and Sarah have both created recipes that are inspired by the world of Pixar’s Cars. This comes as the movie and franchise celebrates its 20th anniversary. For this podcast about food and fandom, recipes are either created or reviewed for each episode. For the very first episode, recipes are being created. Sarah created a popcorn recipe, which can be found at GeekEats.net, and Mr. Daps came up with a baked potato recipe.
The Route 66 High-Octane Pit Stop Potato is a baked potato with Coca-Cola Baked Beans and burnt ends on top of it. For this dish, broccoli was added as a side, and scallions were thrown on top. Route 66 High-Octane Pit Stop Potato Recipe
Ingredients:
- Baked potatoes
- Coca-Cola Baked Beans
- Burnt Ends
- Chopped Scallions
Directions:
- Open the baked potato by either slicing lengthwise and squeezing the ends or piercing a cross pattern and then squeezing the ends.
- Fill potato with baked beans.
- Top with Burnt Ends
- Garnish with chopped scallions
Baked Potato
Ingredients:
- 4 potatoes
- Olive oil
- Salt
Directions:
- Wash/ dry potatoes. Poke holes with a fork
- Rub with oil and kosher salt
- 1- 1.5 hours at 325 degrees, top third of the oven
- Lightly re-oil
- 30-45 minutes at 400 degrees
Coca-Cola Baked Beans
Ingredients:
- 4 (28-ounce) cans baked beans, drained
- 1 package of uncooked bacon, cut into 1-inch pieces
- 1 medium-sized diced yellow onion
- 1/4 cup brown sugar
- 2 garlic cloves, minced
- 2 Tablespoons Mustard
- 2 teaspoons Worcestershire sauce
- 1 12-fluid-ounce can/bottle of Coca-Cola (I used a bottle of Coca-Cola from Mexico)
- 2 tablespoons favorite hot sauce (optional and also to taste)
Directions:
- Layer the beans, bacon, onions, & brown sugar in the crockpot
- Put remaining ingredients and Coca-Cola on top
- Cook in crockpot on LOW for 8-10 hours or HIGH for 4-6 hours
- Stir about halfway through the cooking process
Burnt Ends
Ingredients:
- 12-ounce leftover steak (or brand new), cut into 1-inch cubes
- 1 bottle (around 19 ounces) of favorite BBQ sauce
- 2 tablespoons butter
- 2 tablespoons water
- 2 tablespoons of brown sugar
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1 teaspoon of cayenne (or to taste)
Directions:
- Add BBQ sauce mix and cook until it caramelizes
- Mix brown sugar, garlic powder, paprika, cayenne, and BBQ sauce in a bowl
- Melt butter with water over medium-high heat in a skillet (I used a cast iron skillet)
- Add steak and sear
