Disneyland Paris Gives Behind-The-Scenes Look at a Day With Regal View Lounge Teams

The Regal View Lounge is one of the dining destinations that can now be experienced with the newly opened and expanded Disney Adventure World. Part of the Regal View Restaurant & Lounge, this venue has a kitchen and teams that help make magic on a daily basis for guests who visit Disneyland Paris. Disneyland Paris has shared what it takes behind-the-scenes to make for magical experiences when guests visit this lounge. Take a look below at what a day looks like for the team at the Regal View Lounge.

8 a.m.: The first preparations begin in the kitchen

At The Regal View Restaurant & Lounge, the same kitchen teams work across both spaces. That morning, Juliette is in charge of preparing some of the snacks that will be served in the lounge. Her day begins at 8 a.m. with a first objective: preparing the 19 Écrins listed on the day’s order sheet. And since a little magic finds its way onto the plate too, Juliette uses an ingredient with a particularly fitting name: “magic sucre.” She sprinkles a thin layer onto the cookies before placing them in the oven to caramelize.

A few minutes later, the cookies emerge perfectly golden, while the sweet aroma of caramel fills the room.

Next comes assembly. Depending on the recipe, Juliette tops each cookie with coulis, followed by whipped cream. The floral decorations are added by the front-of-house teams only at the time of service to ensure they remain as fresh as possible. While the Écrins take shape, preparations for the other creations continue. Juliette also works on the Mosaïque de pain de mie, carefully cutting it into portions before it is plated to order.

Depending on demand, the lounge may need to be restocked later in the afternoon. When that happens, a new order sheet is sent to the kitchen, and the teams prepare whatever is needed. This coordination is essential, allowing the lounge to adapt to the pace of the day while ensuring items remain available.

Juliette knows the behind-the-scenes world of pastry-making at Disneyland Paris well. She began her career four years ago at Disneyland Paris’s in-house pastry kitchen, Les Délices de Minnie, where some of the pastries served throughout the destination are made, before joining the teams of The Regal View Restaurant & Lounge a few months ahead of its opening.

10 a.m.: The Lounge gradually comes to life

While the final preparations continue in the kitchen, activity begins to pick up in the Lounge.

Today, Rémi is in charge of setting up the bar. He moves between the refrigerators and cold-storage areas, gathering all the ingredients needed to prepare the day’s cocktails and beverages.

While the first recipes served at The Regal View Lounge were developed ahead of its opening, the teams are now fully involved in shaping how the menu evolves. For the next menu update, the bartenders themselves came up with the different recipes. It is a source of pride for Rémi: “It’s a profession that is constantly evolving. We always try to stay up to date and adapt to trends.” A bartender at Disneyland Paris for nearly ten years, Rémi began his journey as an apprentice in 2017 at Disney Sequoia Lodge. Before joining The Regal View Lounge, he worked at Skyline Bar, at Disney Hotel New York – The Art of Marvel.

As Rémi finishes setting up the bar, Corinne joins him in the Lounge to prepare the dining area. Usually a server at The Regal View Restaurant, she takes advantage of the Lounge’s proximity to explore other aspects of her profession and bring more variety to her day-to-day work. It is a versatility she particularly enjoys: “It’s a place where every day can be completely different. From breakfast, lunch and dinner at The Regal View Restaurant to working in the lounge, we never fall into a routine!”

From one service to the next, Cast Members can move between different atmospheres and different rhythms.

11 a.m.: The final preparations

One hour before opening, Estelle arrives to help with the final stages of setting up the bar. The ingredients are ready, the room is taking its final shape, and every element gradually falls into place ahead of the arrival of the first guests. For Estelle, however, being a bartender is about much more than recipes and technical skills behind the bar. “It’s more than making cocktails; it’s a people-focused profession. We spend a lot of time listening to guests and talking with them.”

Because behind every drink served is also a moment of connection. Understanding what a guest is looking for, offering recommendations, or simply taking the time to chat are all an integral part of the experience the teams provide.

12 p.m.: The Regal View Lounge opens its doors

After three hours of preparation in the kitchen, two hours of setting up the lounge, and the final adjustments in the dining area, everything is now ready.

The creations prepared by Juliette begin making their way onto guests’ plates, while Rémi, Estelle, and their colleagues take their places behind the bar and throughout the dining area to welcome the first guests of the day. It is an experience made possible by meticulous preparation and by the complementary skills of Cast Members who work together, from the kitchen to the front of house, to bring the Lounge to life.

Did you know?

Hidden in the Lounge’s preparation area is a rather unexpected piece of equipment: a 3D printer! For some of the desserts served at The Regal View Restaurant, cookies are created using a machine specifically designed to print them in three dimensions. This technology gives the teams new creative possibilities while making it easier to produce particularly precise and exclusive shapes.

The seasons also inspire the teams: certain cocktails and Écrins evolve throughout the year to reflect the changing seasons.
