‘AMA‘AMA Returning to Aulani, A Disney Resort & Spa

On October 14th ‘AMA‘AMA will be reopening at Aulani, A Disney Resort & Spa. This signature oceanside restaurant will be offering a reimagined fine-dining experience featuring a four-course, prix fixe dinner menu.

Throughout the meal, each course will pay homage to the spirit of Hawai‘i. This will be done with unique flavors, high-quality ingredients, and locally sourced fish and produce. The new menu is created by Chef De Cuisine Nichola Amoriello. It is almost entirely gluten-free and has a plant-based option for every course. This will ensure that every type of dietary need can experience the flavors of Hawaii when they come to ‘AMA’AMA.

The new menu has a wide array of contemporary island cuisine. This includes dishes like the “lox” opakapaka with greens, citrus, and raw and pickled vegetables; and the savory Pork Belly with “scanlan sauce,” onion, kiawe honey and Okinawan sweet potato.

There are also multiple desserts to pick from that were prepared by Pastry Chef Carolyn Portuondo. These desserts include local flavors that are iconic as well. These are flavors like lilikoʻi, calamansi, coconut, mango, macadamia, and Kona coffee. To go with the meal, ‘AMA’AMA has revealed a globally curated wine list that will compliment the dining experience.

The return of ‘AMA’AMA offers a magical dining experience with its elevated menu, beautiful decor, live music, and gorgeous views of Ko Olina Beach.
