Spring may not officially begin until March 20, but restaurants around Walt Disney World Resort are beginning to share their Spring menus. One such restaurant is The Hollywood Brown Derby at Disney’s Hollywood Studios. Their Spring menu is now available, and here are some dishes that just might pique your interest.


First up is a great way to start your meal at Brown Derby is with the Hamachi à la Newburg appetizer. This is a Citrus-cured Hamachi with Creamy Newburg Sauce and Fruit Tartare. This dish is $17. Another appetizer option is the Beet and Kale Salad. This salad has Spinach, Warm Bacon Vinaigrette, Goat Cheese Cream, Beet Purée, and Candied Walnut. The cost of this appetizer is $13.


You can continue your meal with several entrée options. First is the Stuffed Butternut Squash. This dish features a Potato-Chickpea-Vegetable Filling, Roasted Spring Vegetable, and a Mushroom-Lemongrass “Cream” Sauce. This dish is plant-based and is $34. Another delicious entrée option is the Filet Mignon. The filet mignon has Rhubarb-Red Wine Demi-glace, Yukon Gold Potato, and Braised Endive. This dish is $56.

If you are looking for a seafood option, you may want to enjoy the Seafood Fregola. This dish features Steamed Clam and Mussel, Poached Scallop, Fregola Pasta, Spring Greens, and a Crab-Saffron Cream. This dish is $51.

You can enhance your meal with some Glazed Carrots. The carrots come with Mint Yogurt, Pickled Onion, and a Dukkah Spice. This is another plant-based dish, and it is $10.
