Geek Eats: Disney Cruise Line’s Grilled Pineapple and Black Bean Salsa Recipe

One of the highlights of going on a Disney Cruise Line adventure is the variety of food and beverage offerings. This is on top of the magical moments with Disney characters, entertainment, amazing destinations, and luxurious accommodations found on the Disney ships. Disney Cruise Line has shared a recipe for its Grilled Pineapple and Black Bean Salsa to help people recreate this culinary offering that is found at Disney Lookout Cay at Lighthouse Point

The Grilled Pineapple and Black Bean Salsa is offered at several BBQs on the island. This is a refreshing recipe that is great to be served with chips or on top of a favorite protein. It is a good idea to leave extra time ahead of making this salsa to let the pineapple cool. With this in mind, know that the pineapple can be grilled up to two days before mixing it with the other ingredients in the salsa. With that in mind, let’s get to the recipe!

Grilled Pineapple and Black Bean Salsa Recipe

Serves 4-6  

Grilled Pineapple and Black Bean Salsa Ingredients  

  • 1 pineapple, peeled and cored 
  • 1 green bell pepper, diced 
  • 1 red bell pepper, diced 
  • 1 jalapeño pepper, diced 
  • 1 avocado, peeled and diced 
  • 1 (15-ounce) can black beans, rinsed and drained 
  • 1/2 bunch cilantro, chopped 
  • Zest and juice of 1 lime 
  • 1/4 cup olive oil  
  • Coarse salt, to taste 
  • Freshly ground black pepper, to taste 

Grilled Pineapple and Black Bean Salsa Instructions:  

  1. Preheat grill to medium. Slice the pineapple into 1/4-inch thick rings. Grill for 3-4 minutes on each side, until sugar begins to caramelize. Cool completely, then dice. 
  1. Combine diced pineapple, green bell pepper, red bell pepper, jalapeño pepper, avocado, and black beans in a large bowl.  
  1. Gently stir in cilantro, lime zest and juice, and olive oil.  
  1. Season with salt and pepper, to taste.
