Geek Eats: Grilled Impossible Hawaiian BBQ Skewers Recipe Inspired by ‘Lilo & Stitch’

Lilo & Stitch is in theaters and currently heading for the $1 billion club at the box office. Today, for Stitch Day (June 26 or 6/26), Disney also announced that a sequel to this live-action version of the film is in the works. Meanwhile, D23 hopped online to share a recipe for Grilled Impossible Hawaiian BBQ Skewers Inspired by Lilo & Stitch. These skewers aren’t just delicious, they are also healthy.

Makes 4 Skewers 

Ingredients

BBQ Sauce 

  • 2 teaspoons vegetable oil
  • 1/2 cup roughly chopped yellow onion
  • 1 jalapeño pepper, seeded and chopped
  • 4 cloves garlic, roughly chopped
  • 2 tablespoons tomato paste
  • 1/2 tablespoon chili powder
  • 1/2 tablespoon dry mustard
  • 1 cup ketchup
  • 1/4 cup molasses
  • 1/4 cup pineapple juice
  • 1/2 cup apple cider vinegar
  • 2 tablespoons hot sauce
  • 3 cups brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 bunch cilantro, chopped

Impossible® Meatballs 

  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons dried oregano
  • 1 teaspoons salt
  • 12-ounce package Impossible® Beef Made from Plants

Hawaiian Meatball Skewers 

  • 1 green bell pepper
  • 1 orange bell pepper
  • 1 red bell pepper
  • 1 red onion
  • 1 fresh pineapple

Instructions

For BBQ Sauce:

  1. Heat vegetable oil in a large saucepan over medium heat for 5 minutes, until hot. Add onion, jalapeño, and garlic. Sauté 3-5 minutes, until soft.
  2. Whisk in tomato paste, chili powder, and dry mustard. Cook for 1 minute.
  3. Add ketchup, molasses, pineapple juice, apple cider vinegar, and hot sauce, whisking frequently until simmering. Whisk in brown sugar and simmer, stirring occasionally for 10 minutes. Add salt and pepper, adding more as needed. Cool for 10 minutes.
  4. Pour BBQ sauce in a blender and purée until smooth. Refrigerate up to 2 days. Warm before serving.

For Impossible® Meatballs:

  1. Combine garlic power, onion powder, dried oregano, salt, and Impossible® Beef Made from Plants in a large bowl.
  2. Divide into 12 portions and roll into meatballs.
  3. Refrigerate until ready to assemble skewers.

For Hawaiian Meatball Skewers: 

  1. Cut bell peppers, red onion, and pineapple into 1-inch pieces, making sure there are at least 12 pieces of each.
  2. Alternate bell peppers, red onion, pineapple, and Impossible® Meatballs on each skewer. There should be 3 meatballs on each skewer.
  3. Refrigerate until ready to grill.
  4. Preheat grill to 400°F (or medium-high heat).
  5. Grill skewers for 2 minutes on each side, basting with BBQ sauce after each turn, until meatballs are 165°F.
  6. Serve with additional BBQ sauce and cilantro.
