GEEK EATS: Leftover Thanksgiving Meal Shepherd’s Pie

Thanksgiving is over and if you are like me, you have a ton of leftovers that you are trying to figure out what to do with. You could make Turkey Turnovers again, but you’ve already tried that recipe. Looking in the refrigerator, it is quite evident that there is still more than a meal left from turkey day. So how about turning them all into a Shepherd’s Pie? That’s what I decided to do. I am pleased to say that I was quite pleased with the results! The premise is taking pretty much all of the Thanksgiving meal leftovers and turning them into a Shepherd’s Pie. I found several different versions of this recipe online but ended up creating my own with the same general ideas. Give this recipe a try or make your own variation! GEEK EATS: Leftover Thanksgiving Meal Shepherd’s Pie

Ingredients

  • 2 cups (approximately) Green Bean Casserole
  • 2/1/2 cups (approximately) Turkey
  • 1 cup (approximately) Gravy
  • 2 cups (approximately) Stuffing
  • 2 cups (approximately) Mashed Potatoes
  • Optional: left over cranberry sauce

Instructions

  1. Pre-heat oven to 350.
  2. Shred 2/1/2 cups of turkey.
  3. Mix 2 cups of green bean casserole with turkey.
  4. Layer turkey and green bean casserole mix at bottom of a 2/1/2 quart circular casserole dish (or whatever you prefer to use)
  5. Spread a layer of gravy on top of the turkey/bean casserole mix.
  6. Layer the stuffing on top of the gravy.
  7. Optional: spread cranberry sauce on top of gravy.
  8. Spread the mashed potatoes on top of the stuffing (or cranberry sauce).
  9. Put in oven at 350 degrees for approximately and hour or until mashed potatoes are browned and you can see bubbles coming out from underneath to ensure it is cooked through.

This recipe I thought turned out pretty good. It didn’t need any seasoning as all of the leftovers included in it already had been seasoned. I did let some of the ingredients sit out and get closer to room temperature while I prepared the leftover turkey. This ended up being a hearty meal on a cool evening that I definitely will be making again! You could also use other leftovers from your Thanksgiving meal if you don’t have the specific ingredients that I have. My hunch is that this is a fairly forgiving recipe!
