Thanksgiving is the time to sit back and reflect on all that we are thankful for. It’s a time for spending time with family, watching parades, watching/playing football, and oh yes… eating Turkey. Inevitably there is leftover turkey though. For some, left overs can be quite stressful. In my family though this is not from the case. In fact, left overs are embraced (if not loved more than the actual Thanksgiving meal itself) in my family due to a family dish called Turkey Turnovers. This is one of those meals that just makes you feel good, especially when living in a cooler environment. I’m not entirely sure where this recipe came from but it is a regular meal after any Turkey is roasted for any holiday. I hope you enjoy it.

Yield: Approximately 8 Turkey Turnovers

Turkey Turnovers – Geek Eats Recipe

Ingredients

    Turkey Turnovers Filling
  • 2 Tablespoon finely chopped onion (I do a half of an onion because I love onion, you'll thank me if you do this too)
  • 1/4 cup finely chopped celery
  • 1 Tablespoon butter
  • 1/2 teaspoon salt
  • 1/3 cup thin gravy or broth from bones (or bullion)
  • 1/2 cup grated carrots
  • 1 1/2 cup finely cut left (or I just roughly chop it) over turkey with some skin
    Turkey Turnovers Pastry
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • Pinch of Poultry Seasoning (or a bit more)
  • 1/3 cup shortening (or butter/coconut oil)
  • 1/3 cup milk
    Béchamel Sauce
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/4 cups milk
  • Salt
  • Pepper

Instructions

    Turkey Turnovers Filling
  • Sauté onion and celery in butter until soft (about 5 minutes)
  • Add remaining ingredients
  • Gently mix together and keep warm on stove until ready for filling turnovers.
    Turkey Turnovers Pastry
  • Cut shortening into dry ingredients until it has the consistency of rice.
  • Add milk and stir quickly until dough stiffens.
  • Knead quickly on lightly floured board 8 times.
  • Roll out thinly and use small round plate to cut out circles.
  • Put circles of pastry on un-greased cookie sheet.
    Assembly the Turnover
  • Fill one side of pastry with filling.
  • Fold other side of pastry over filling.
  • Press edges together with a fork to seal.
  • Prick tops of folded pastries with forks twice for steam vents.
  • Brush tops of pastries with melted butter (optional but you should do it)
  • Bake in over at 425 F for 10-15 minutes or until pastry is golden brown.
  • Serve with hot Béchamel Sauce.
    Béchamel Sauce
  • Melt Butter in sauce pan
  • Mix Flour into butter taking care to not let it burn (keep heat fairly low)
  • Warm milk and then stir into flour/butter mixture.
  • Stir continuously as you bring mixture to boil.
  • Once it boils, take off heat and add salt and pepper
