Grilled Mixed Baby Potatoes – Geek Eats Recipe

I’m all about easy recipes that can be grilled in the backyard and not heat up the kitchen in the summer. While visiting the market one day I came across a bag of Mixed Baby Potatoes and this recipe was the culmination of that discovery. It also has become a favorite around my house. Oh, and I also like that it utilizes the different types of potatoes but you could just use your favorite type of baby potatoes instead.

Grilled Mixed Baby Potatoes – Geek Eats Recipe

Ingredients

  • Bag of Mixed Baby Potatoes
  • Fresh Rosemary (1/4 cup rough chop)
  • Fresh Parsley (1/4 cup rough chop)
  • Fresh Basil (1/4 cup rough chop)
  • Favorite Olive Oil
  • Garlic Salt
  • Pepper

Instructions

  1. Start by getting the grill started. Aim for heating it up to about 400 degrees.
  2. Collect your ingredients and wash them. I get my herbs from the garden and potatoes from the store, both are places that aren’t the cleanest so cleanliness is always a good idea!
  3. Next, dump your mixed baby potatoes into a bowl (or a large ziplock bag if you prefer).
  4. Drizzle some Olive Oil in with the potatoes and cover your bowl and mix well so the potatoes are just barely glistening with the Olive Oil. You can use a spoon to mix it if you don’t have a way to cover your bowl. Or if using a ziplock bag, zip it and shake it.
  5. Chop up your herbs roughly. Some people prefer a fine mince but I like the rough chop for the grill. I like to get a fairly even mix of Rosemary, Parsley, and Basil and then just dump it in with the potatoes.
  6. I also like to add Garlic Salt and Pepper on top as well. I sprinkle it over the potatoes so it is well seasoned but not covering the potatoes like a blanket of snow.
  7. Once all the ingredients are in the bowl, mix them up. I like to do it by shaking the bowl with a lid on it as I mentioned before.
  8. Now it’s time for the grill! I have a veggie grill that I put them on but unless your grill is pretty wide, you can put them straight on the grill. I put the potatoes all on one side and turn it down as low as it goes and the opposite side gets turned up to high (this is to avoid scorching the potatoes).
  9. Every ten minutes or so, turn the potatoes so there isn’t too much grill in one spot on the potatoes.
  10. Grill the potatoes until they are feeling a bit soft when you poke them with a fork (generally about 45 minutes to an hour).
  11. Once finished remove them from the grill and serve with any grilled meat really. I have sometimes also sprinkled on lemon juice once finished. They can also be dipped in your favorite dipping sauce or you can cheat and just use a salad dressing which is also delicious. Or… eat them as they are! They are yummy!
