Backyard Salmon – Geek Eats Recipe

My backyard right now is full of wonderfully delicious smells and tastes. There are herbs, fruit trees, and vegetables growing (despite the heat) and creating wonderful ingredients for creating fresh recipes. I found a deal on salmon at the market so I thought it would be fun to mix and match a few recipes and hopefully make something delicious. So this is what I’m calling my Backyard Salmon recipe because almost all the ingredients were from the backyard.

Backyard Salmon – Geek Eats Recipe

This recipe could also be used on the backyard grill and be delicious. Same process but substitute the oven with your grill!

Ingredients

  • 2 Salmon Fillet
  • 6 Tablespoons of favorite Olive Oil (roughly)
  • Salt (1 teaspoon)
  • Pepper (1 teaspoon)
  • 1/2 Fresh Lemon (squeezed to taste/smell)
  • Basil (6 medium sized leaves roughly chopped)
  • Four sprouts of Parsley (a little over a Tablespoon)
  • Two Garlic Cloves (minced)

Instructions

  1. In a bowl combine the olive oil, salt, pepper, lemon, basil, parsley and garlic. This is your marinade.
  2. Create two boats out of aluminum foil and place a salmon fillet in each one skin side down(each filet should be portion sized so… six ounces approximately). The goal is to completely encase each piece of salmon and marinate it, keeping the marinade inside. So err on the side of caution with the size of your aluminum foil.
  3. Divide and pour the marinade between the two pieces of salmon, taking care to keep the marinade inside the aluminum foil boats. Wrap the aluminum foil around the pieces of salmon, and put them in a casserole dish before putting in the refrigerator for at least an hour (this is basically to avoid making a mess).
  4. 45 minutes later, start your oven up at 375 degrees so that it will be ready to go when your fish is done marinating.
  5. After the fish has been marinating for an hour, take it out of the oven (leave it in the aluminum foil) and put it in a room temperature casserole (don’t want any unpleasant surprises with temperature changing glass). This goes in the oven for 35-45 minutes. The fish will be done when flaky when tested with a fork.

I hope you enjoy this recipe! I really do enjoy cooking and while I’m definitely no chef, I do find it to be a great way to unwind at the end of the day. Having ingredients coming fresh from the backyard make it even more enjoyable (but I think I’ll get into those in another post). Let me know how this recipe turns out for you. I basically threw it together and it turned out decently last night so I’m definitely open to ideas! Oh, and I served it with roasted garlic brussels sprouts and mashed potatoes.
